Berry Banana Power Smoothie

Well, I did it again. I broke my breakfast rut. However, this time I changed up my morning meal out of necessity rather than because of the delicious chocolate barley pancakes taunting me from the refrigerator. Would you ever believe that my house would lack both fresh AND dried fruit? Impossible! On this Friday, no ripe red strawberries, no tart raspberries, and no antioxidant-packed blueberries hogged the refrigerator. Luckily, my mother had frozen a huge bag of strawberries from their peak season in mid-June. Armed with my staple frozen bananas and a bag of frozen blueberries, I did what any sane person (especially a vegan) with a sense of tasty food would do–make a smoothie.

But, being the self-proclaimed health freak that I am, I had to add more of a nutritional punch to this smoothie than simply fruit (though berries and bananas are quite nutritionally respected in their own rights). Thus, I tossed in…

  • Soy milk–for protein, vitamins B12 and D, omega-3, 6, and 9 fatty acids, calcium, and potassium.
  • Flax seeds–for omega-3 fatty acids, lignans, fiber, and iron.
  • Chia seeds–for omega-3 fatty acids, fiber, and iron.
  • Almonds–for vitamin E, monounsaturated fat, magnesium, and potassium.

And so, a POWERFUL smoothie is born! One to urge you on throughout the entire day, one that inspires you to climb a mountain or run a triathalon…or one that tastes super duper fantastic and readies you for your morning elliptical machine run plus 20 minutes of ab toning. In any case, I love this smoothie.

Berry Banana Power Smoothie (Raw if using nut milk, Gluten Free, Soy Free if using nut milk, Oil Free)

Serves 1 generously.

Ingredients:

  • 1 large frozen banana
  • 1/2 cup blueberries (fresh or frozen)
  • 1/2 cup strawberries (fresh or frozen)
  • 1 tbsp flax seed meal
  • 1 tbsp chia seeds
  • 1/4 oz almonds (about 1 tbsp or 7 almonds)
  • 1 cup soy milk (can substitute any nut milk for a raw and soy free smoothie)

Slice the banana and combine with all other ingredients in a blender. Puree on high until incredibly smooth, stirring and shaking your confounded old blender as much as necessary (oh, just me who needs a new blender? Well, lucky you).

 

I served mine in a big bowl with, you guessed it! My favorite Ezekiel sprouted whole grain granola. So breakfast-ly predictable.

Breakfast Checklist: Protein–soy milk, nuts, and seeds. Whole Grain–granola. Fruit–banana, blueberries, and strawberries.
