Cheezy Carrot Sauce (Raw, Gluten Free, Soy Free, Oil Free)
Makes 3 cups.
- 4 medium-smallish carrots, chopped (about 1 1/2 cups)
- 1 large zucchini (or any summer squash, I used pattypan)
- 1/4 cup tahini
- 2 tbsp apple cider vinegar
- 2 tbsp chia seeds
- 2 tsp cumin
- 1 tsp turmeric
- 4 tbsp nutritional yeast
Combine all ingredients in food processor and blend until smooth. This took a bit of time, scraping down the sides of the bowl, and pushing the unprocessed vegetables to the bottom of the bowl closer to the blade, but everything became incorporated in the end. Adapted from Pure2Raw.
This sauce is delicious as a pasta or pizza sauce (spiralized zucchini noodles, anyone?), or a thick salad dressing.
