Beet Hummus (Raw, Gluten Free, Soy Free, Oil Free)
Makes 3 cups.
- 2 smallish zucchini (about 2 cups chopped)
- 2 small beets, shredded
- 1/2 cup water
- 2 tbsp apple cider vineger
- 1 large clove garlic
- 1 cup tahini
- 1 large handful basil
Combine all ingredients in food processor and blend until smooth. Adapted from Pure 2 Raw.
Astounding color, no? If you have a Vitamix or a super-duper powerful food processor, you can simply chop the beets instead of grating them. My average food processor requires some extra help in his culinary undertakings. I imagine this would pair well with some kale hummus (can’t have hummus without more hummus), and raw flax crackers. Better go whip some up right about…..now!
